Looking to change up the kids lunchbox a little this upcoming school year? This Sandwich Kabobs Bento Box is a new spin on your favorite sandwich and chips lunch. Kids will love the fun sandwich kabobs and these homemade beet chips are much healthier than bagged potato chips! The best part is the kids can help assemble the kabobs, making them more excited to dive into their lunchbox at lunch time!
Nutrition Tip: Beets contain two important nutrients that can help lower blood pressure: potassium and nitrate.
For this Sandwich Kabobs Bento Box, we used ham, cheese, and some vegetables. We have made them before with turkey, too. So you can definitely use whatever deli meat you have on hand, your kids’ favorite bread, and other flavors of cheese to your liking. I let the kids get creative with what they like and they place them on the skewers, too! Then pack up a few favorite snacks to round out the entire lunch!
Key Ingredients for this Sandwich Kabobs Bento Box
Deli Ham-We chose to use ham in these kabobs, but turkey or chicken works well too!
Cheese– We had some cubed cheddar cheese so used that. You can use whatever cheese you have. We like to incorporate cheese in the kid’s lunchbox to boost their protein and calcium intake.
Cucumbers– As one of my family’s favorite vegetables, cucumbers are made up mostly of water helping the kids to stay hydrated throughout the day.
Cherry Tomatoes– I love the versatility of cherry tomatoes. We snack on them just as they are at our house so we like to incorporate them where we can! Tomatoes are known to help maintain strong bones, great for your heart, great for your skin health, and a great source of potassium.
Wheat Bread– Our family chooses to eat whole grain and whole wheat breads. Of course you can use whatever bread you have on hand. We choose whole grains when we can so that the kids get some extra Vitamins and nutrients in their diet.
Beets– I wanted to try out these baked beet chips and so glad we did! Beets are high in fiber, loaded with Vitamin C, and can boost your energy.
How to make this Sandwich Kabobs Bento Box
For the Beet Chips:
First preheat your oven to 375ºF degrees. Then place the thinly sliced beets on a parchment-lined baking sheet. Brush them lightly with oil and then sprinkle with some salt.
Bake the beets for about 20 minutes or until the edges start to brown. Remove them from the oven and let cool.
For the Sandwich Kabobs:
First start with a skewer or a coffee stirrer and assemble each one with with tomatoes, cheese cubes, bread, ham, and cucumbers.
For the Bento Box:
Then fill your bento box with the beet chips, sandwich kabobs, fruit, yogurt, or any other family favorite sides!

Sandwich Kabobs Bento Box
- 1 large beet peeled, thinly sliced
- 1 teaspoon olive oil
- 1/2 teaspoon sea salt
- 4 grape tomatoes
- 4 cubes lowfat Cheddar cheese
- 2 slices whole wheat bread cut into small squares
- 2 slices low-sodium ham cut in half
- 1/2 small cucumber sliced lengthwise to create 4 ribbons
- 1 small apple
- 1/2 cup lowfat vanilla Greek yogurt
- Preheat oven to 375ºF.
- Place beets on parchment-lined baking sheet, brush with oil and sprinkle with salt.
- Bake 20 minutes or until edges start to brown. Remove from oven and let cool.
- Assemble sandwich kabobs with tomatoes, cheese, bread, ham and cucumber on skewers or coffee stirrers.
- Serve with Crispy Green and yogurt.
