Grilled cheese is one of those classic kid foods, and one that most of us still enjoy as adults! This Blackberry Grilled Cheese version is loaded with fresh blackberries, ooey-gooey provolone cheese, and melted to perfection between whole grain bread. Better yet, this recipe comes together quickly with just a few ingredients for a quick week night meal! You can have the kids help you make these grilled sandwiches, too!

Key Ingredients for this Blackberry Grilled Cheese

Blackberries – we love these juicy berries because not only are they delicious they are high in antioxidants, fiber and Vitamin C, making them a delicious superfood and health booster. Great in baking and savory dishes alike, they make a great snack, too!

Provolone Cheese- This semi-hard cheese has a sharp taste. Provolone cheese has hints of nutty flavors with a little salty undertones which makes it a great cheese in this grilled cheese recipe.

Whole Grain Bread- We chose whole grain bread in this recipe for an extra does of nutrition for our family. Whole grain breads have less sugar than white bread and are high in B Vitamins, fiber, and protein. There are many other breads that would work great in this recipe, but this is what we chose!

How to make this Blackberry Grilled Cheese at home

Step 1: Heat up the skillet

First start by heating your skillet over low heat on the stove.

Step 2: Coat the whole grain bread

Mix the mayonnaise and mustard in a small bowl and spread onto one side of each slice of the bread.

Step 3: Grill the sandwich

Place the bread mayo-side-down into the skillet. Top with the provolone cheese and blackberries. Add the second slice of bread mayo-side-up. Then cook for about 3-4 minutes on each side, or until bread is toasted and cheese is melted.

Yes! Other white cheese that would be tasty in this recipe would be a mild white cheddar, fontina, and gouda would be delicious!

Can we add anything else to this grilled cheese?

Sure! Do you want to make is a little healthier? Add some arugula or fresh spinach for a nice crunch.

Ingredients

  • 1 Tbsp. mayonnaise
  • 1 Tbsp. stone-ground mustard
  • 4 slices whole-grain bread
  • 2 slices provolone cheese
  • 10-12 blackberries, cut in half

Instructions

  1. Heat a medium-sized skillet over low heat.
  2. Mix mayonnaise and mustard in small bowl and spread on one side of each slice of bread.
  3. Place bread mayo-side-down in skillet. Top with cheese and blackberries. Add second slice of bread mayo-side-up.
  4. Cook 3-4 minutes per side, or until bread is toasted and cheese is melted.
