What we love about this Meal Prep Breakfast Scramble
This quick breakfast is loaded with some great veggies and nutrition! Did you know that tomatoes are a major dietary source of the antioxidant lycopene which is linked to reducing heart disease and cancer? We used cherry tomatoes in this recipe which are bursting with flavor, too.
And eggs? Eggs contain a nutrient called choline, which an help us to maintain a healthy metabolism. Choline can also help in preventing memory loss and can even improve your cognitive function! Well you may be a pro at meal prep or just getting started. Meal prepping is preparing meals for more than one day at a time. You can either toss these items in the refrigerator for the week or some meals are great to go in the freezer to take at a later date and time. We have some great meal prep lunch ideas, too like our Greek Chicken Bowls.
