So, I need a healthy breakfast options that can be ready in minutes, and that is exactly what this sweetpotato toast is. Easy. Healthy. Delicious. And I can top my sweetpotato toast in a variety of ways…depending on if I am feeling a little sweet or a little savoy that morning 🙂

What is sweetpotato toast?
Did you know that sweetpotato toast was actually a thing?? We saw it on TikTok and had to give it a try. Basically you use slices of sweetpotato for the actual toast! No bread! Then you can top your toasted sweetpotato slices like you would regular toast. And, unlike traditional toast, sweetpotato toast is naturally gluten-free and grain-free.
Why make sweetpotato toast?
Well, the first reason you need to try sweetpotato toast is that it’s delicious. Another reason would be that sweetpotatoes are loaded with vitamins and nutrients. They aren’t called the orange superfood for nothing 😉 So, when you are making yourself some sweetpotato toast, you are giving yourself a good serving of in fiber, vitamins A and C, iron and calcium and more.
Easiest way to cut the sweetpotato
The easiest way to cut your sweetpotato would definitely be with a mandoline slicer. Now, we didn’t have one, so we just used a knife, which was fine…just be careful.
Toppings for sweetpotato toast
One of the things that I love about sweetpotatoes is that they are good in sweet and savory dishes, so your toast toppings can be sweet or savory! We love the mashed avocado with everything bagel seasoning just as much as the sunbutter and blueberries.
How to cook the sweetpotato for sweetpotato toast
We simply sliced it and put it in the toaster, but you can also place the slices in the oven at 350 degrees for about 15 – 20 minutes.
Can you make sweetpotato toast ahead of time?
YES! Prep and par-bake the sweetpotato slices to make for a super-easy and healthy breakfast option. Once you have them par-bake, allow the slices to cool completely and then store them in an airtight container in the refrigerator until you are ready to use them. To warm your toast slices, simply pop them in the toaster and then add your favorite toppings. Breakfast is served!

Sweetpotato Toast 3 Ways
- Sunbutter and blueberries
- Avocado and everything bagel seasoning
- Over easy egg and sriracha
- Sweetpotato slices
- Cut large sweet potato into ¼” slices.
- Spray with cooking spray.
- Toast in toaster for 5 minutes or until the sweetpotato slice brown and softens.
- Top with desired toppings.
