This Broccoli Salad with Mandarins is loaded with flavor and nutrients! The perfect side dish or light lunch recipe!

Ingredients
  

  • 6 cups broccoli florets cut slightly smaller than bite size
  • 1/4 cup raisins
  • 10 slices turkey bacon cooked and chopped small I cook the bacon in the oven at the same time as the broccoli
  • 4 mandarin oranges peeled and separated
  • 1/2 small sweet onion very thinly sliced
  • 1/2 cup fat free/sugar free poppy seed dressing (we used Skinny Girl)

Instructions
 

  • Preheat the oven to 425 degrees.
  • Put turkey bacon on a large baking sheet and put in oven.
  • Spray a separate baking sheet with olive oil spray and spread out the broccoli in a single layer across.
  • Spray with olive oil spray and sprinkle with salt.
  • Roast in the oven for 10-12 minutes, or until barely beginning to brown on the edges. The broccoli should be a bright. Let the broccoli cool completely before combining with the other salad ingredients.
  • In a large bowl, combine the cooled salad ingredients and then toss with the dressing.

Notes

This is delicious to consume immediately. But, we feel like it is even better after letting all the flavors marinate for around three hours or more in the refrigerator. Enjoy!
