Broccoli Salad with Mandarins
Ingredients
- 6 cups broccoli florets cut slightly smaller than bite size
- 1/4 cup raisins
- 10 slices turkey bacon cooked and chopped small I cook the bacon in the oven at the same time as the broccoli
- 4 mandarin oranges peeled and separated
- 1/2 small sweet onion very thinly sliced
- 1/2 cup fat free/sugar free poppy seed dressing (we used Skinny Girl)
Instructions
- Preheat the oven to 425 degrees.
- Put turkey bacon on a large baking sheet and put in oven.
- Spray a separate baking sheet with olive oil spray and spread out the broccoli in a single layer across.
- Spray with olive oil spray and sprinkle with salt.
- Roast in the oven for 10-12 minutes, or until barely beginning to brown on the edges. The broccoli should be a bright. Let the broccoli cool completely before combining with the other salad ingredients.
- In a large bowl, combine the cooled salad ingredients and then toss with the dressing.
