  • 2 cups quick cook oats
  • ½ cup plain Greek yogurt or can use a Strawberry Breakfast Smoothie
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • cup sugar optional
  • ¼ cup blueberries

Instructions
 

  • Preheat the oven to 350°F.
  • Add oats, yogurt or smoothie, eggs, vanilla, baking powder, salt and sugar (if using) to a blender. Puree until smooth.
  • Pour batter into a 9×9 inch baking pan sprayed with nonstick cooking spray.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Serve hot.
