- 2 cups quick cook oats
- ½ cup plain Greek yogurt or can use a Strawberry Breakfast Smoothie
- 3 eggs
- 2 teaspoons vanilla
- 1 ½ teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup sugar optional
- ¼ cup blueberries

Preheat the oven to 350°F.
Add oats, yogurt or smoothie, eggs, vanilla, baking powder, salt and sugar (if using) to a blender. Puree until smooth.
Pour batter into a 9x9 inch baking pan sprayed with nonstick cooking spray.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Serve hot.
