We have been utilizing our slow cooker a bit more lately. Last week we made a Veggie Lasagna and the week before that we made Shredded Pork Tacos for “Taco Tuesday”. There is something about tossing in the ingredients into the pot and not worrying about it for the day that just makes my life easier.

How to Make Steak Fajitas in the Slow Cooker

First wash and slice up the bell peppers and onions. In a small mixing bowl combine the garlic, cumin, chili powder, lime juice and cilantro. Mix it all up and then rub into the flank steak.

Next add the flank steak to the slow cooker. Add the peppers and onions on top, cover and set to low cook for 5-6 hours.

Remove the steak from the slow cooker and slice.

How to Make Homemade Pico De Gallo

Mix tomatoes, onion, cilantro, jalapeño, lime juice, garlic and salt in a mixing bowl. Cover and refrigerate for 30 minutes.

Then assemble tortillas with steak, peppers, onions, lettuce, Pico de Gallo, avocado and yogurt.

Slow Cooker Steak Fajitas

  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • 1 pound flank steak
  • 1 large sweet onion sliced
  • 3 bell peppers seeded, sliced
  • 4 8-inch whole-wheat tortillas
  • 1 cup shredded lettuce
  • 1 avocado sliced, for serving if desired
  • 1/4 cup plain Greek yogurt for serving if desired

Pico de Gallo

  • 2 cups diced tomatoes
  • 1/2 cup diced sweet onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño seeded, diced
  • 1 tablespoon lime juice
  • 1 clove garlic minced
  • 1/2 teaspoon salt

Instructions

  • Add steak, onions and peppers to slow cooker, and cook on low 5-6 hours.

Pico de Gallo

  • Mix all ingredients together in a small bowl, cover and refrigerate until ready to use.
