These easy antipasti pesto tortellini skewers are ready in just 10 minutes making them the perfect addition to lunchboxes, a yummy snack or easy meal option.

Ingredients
  

  • 9 oz package mixed tortellini
  • 1 cup NatureFresh cherry tomatoes
  • ½ cup mozzarella cheese cubed
  • 8 salami sliced
  • 1 tbsp olive oil
  • 2 tbsp pesto

Instructions
 

  • Cook tortellini according to package instructions.
  • Once cooked and drained, drizzle with olive oil, toss and set aside. 
  • Thread tortellini, cherry tomatoes, salami, and cubed mozzarella onto 6” bamboo skewers
  • Drizzle with pesto to taste or serve on the side

Notes

Add more pesto if desired.
Adding the olive oil to the tortellini after cooking keeps them from sticking.
These are delicious served warm or cold.
Feel free to leave out the skewers and serve as a yummy pasta salad.
