  • 2 teaspoons plus 1 tsp. olive oil, divided
  • 1 1/2 pound boneless skinless chicken thighs, cut in 1 1/2-inch pieces
  • 1/3 cup grated Parmesan cheese
  • 1 lemon juiced

Sunny Tropical Dessert

  • 1/2 cup chopped pineapple
  • 1 orange peeled, chopped
  • 3 tablespoons 100% orange juice
  • 2 tablespoons shredded coconut
  • 2 tablespoons chocolate chips

Instructions
 

Roasted Chicken & Vegetables

  • Toss veggies with 2 tsp. oil. Lay single layer on baking sheet and bake 5 minutes. Remove from oven.
