Ingredients
- 1 egg
- 1.5 cups rolled oats
- 1/3 cup unsweetened shredded coconut
- 1/3 all purpose flour
- 2 Tbsp. brown sugar
- 3 Tbsp. unsalted butter melted
- 1/4 cup honey
- 1/2 tsp cinnamon
- 1 tsp pure vanilla extra
- Pinch of salt
- 1/2 cup vanilla Greek Yogurt
- 1/2 lemon juiced
- 3 Wish Farms Strawberries
- 1/4 cup Wish Farms Blueberries
- 1/4 cup Wish Farms Blackberries
Instructions
- Preheat oven to 350F
- Add egg, rolled oats, shredded coconut, flour, brown sugar, butter, honey, cinnamon, vanilla extra, and pinch of salt to a large mixing bowl. Mix until ingredients are incorporated.
- Evenly spread the mixture into a greased spring pan and bake for 20 minutes or until golden brown.
- Remove pan from oven and allow to cool.
- Mix 1/2 cup vanilla Greek yogurt with juice from half a lemon.
