Healthy Chocolate Chip Sweetpotato Muffins
Ready in just about 30 minutes, these healthy chocolate chip sweetpotato muffins are perfect for breakfast or a snack. Make them on Sunday for an on-the-go breakfast option all week long!
Mornings are always a busy time in my house. No matter how planned and prepped I am, time seems to magically speed up in the morning and before you know it, we are all running around at the last minute to get out the door. Therefore, having an easy on-the-go breakfast is must. Even better if it’s a little sweet and has chocolate chips in it 😉 I mean, who can resist that?! I know I can’t!
I know that when you think of sweetpotatoes you may think of Thanksgiving or Christmas, I love a yummy sweetpotato casserole just as much as the next person, but it doesn’t mean you can’t enjoy this healthy treat anytime of the year. In fact, sweetpotatoes are one of the most nutritious vegetables you can find. And you can find them all year long! Which means you don’t need to wait for November and December to come for you to be able to enjoy this orange superfood.
Because of its high nutritional value and lower starch content, the US Department of Agriculture highly suggests including sweetpotatoes in your daily diet, and I highly recommend one way of doing that is with these Chocolate Chip Sweetpotato muffins.
Did you know that sweetpotatoes are rich in beta carotene, vitamin A, plus, have fiber, folate, potassium, and other vitamins that your body needs? Yep! Plus, they’re delicious and so versatile.

And, of course, in these muffins. These Chocolate Chip Sweetpotato muffins are an excellent easy breakfast option, but they also make for a delicious afternoon snack. We didn’t use a lot of chocolate chips, but it was the perfect amount…everyone loved them! It was the perfect balance of sweet and savory.
Since sweetpotatoes are rich in fiber, aside from tasting good, help with better digestion. Fiber also aids in the balance of water in your body as well. So, these sweetpotato muffins also help you feel fuller longer…thanks to the fiber.

- Vegetable oil
- Baking powder
- Baking soda
- Vanilla extract
- Mini chocolate chips

Can you freeze sweetpotato muffins?
Sure can! If you actually have any left 😉 I recommend wrapping them individually in freezer wrap or press n seal then putting them in a ziploc bag before tossing them in the freezer.
You will see that in the recipe I used mashed sweetpotato, feel free to cook the sweetpotato in your favorite way. I have purchased the ones you can just toss in the microwave, but I have also tossed them in the slow cooker for a few hours on low. Baking sweetpotatoes is also an easy option. So you do you!

Ok, there’s your fun fact for the day, now let’s get to our yummy sweetpotato muffins recipe. I actually recommend making a double batch…they are that good.
Healthy Sweetpotato Muffins
- 1 cup mashed sweetpotato
- 2 cups all purpose flour
- ⅓ cup vegetable oil
- ⅓ cup honey
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp salt
- ½ cup Mini chocolate chips
- Preheat oven to 350°
- Add mashed sweet potatoes, oil, honey, eggs, and vanilla extract to a bowl and mix
- Use a separate bowl to mix flour, baking powder, baking soda, cinnamon and salt
- Add dry ingredients to the wet ingredients bowl and fold the mix until its fully combined. Fold in chocolate chips
- Spray a muffin tin with cooking spray. Scoop batter in the tin.
- Bake for 20 to 25 minutes or until muffins are golden.
