In fact, sweetpotatoes are one of the most nutritious vegetables you can find. And you can find them all year long! Which means you don’t need to wait for November and December to come for you to be able to enjoy this orange superfood.

Sure can! If you actually have any left 😉 I recommend wrapping them individually in freezer wrap or press n seal then putting them in a ziploc bag before tossing them in the freezer.

You will see that in the recipe I used mashed sweetpotato, feel free to cook the sweetpotato in your favorite way. I have purchased the ones you can just toss in the microwave, but I have also tossed them in the slow cooker for a few hours on low. Baking sweetpotatoes is also an easy option. So you do you!

Well, I haven’t! Did you know that sweetpotato is actually all one word?! In 1989, the National Sweetpotato Collaborators Group modified their spelling to a single word and recommended that individuals in academia adopt the same practice. Subsequently, in 2019, the North Carolina Sweetpotato Commission urged the state general assembly to formally endorse the alteration of the conventional spelling from “sweet potato” to “sweetpotato,” and this proposal was successfully approved. As a result, the state officially recognizes and spells it as “sweetpotato” in a single word, although it may still commonly appear as two words. Now ya know!

Ingredients
  

  • 1 cup mashed sweetpotato
  • 2 cups all purpose flour
  • cup vegetable oil
  • cup honey
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ cup Mini chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Add mashed sweet potatoes, oil, honey, eggs, and vanilla extract to a bowl and mix
  • Use a separate bowl to mix flour, baking powder, baking soda, cinnamon and salt
  • Add dry ingredients to the wet ingredients bowl and fold the mix until its fully combined. Fold in chocolate chips
  • Spray a muffin tin with cooking spray. Scoop batter in the tin.
  • Bake for 20 to 25 minutes or until muffins are golden.
