The cooler weather is approaching and I don’t know about you, but we are READY for all things Fall! Pretty leaves, warmer clothes, cozy meals, and of course apple and pumpkin treats. We headed out to the apple orchard last week and got me to thinking of new apple recipes. My kids wanted to buy one of the apple pies and I knew we had to come up with a healthier version of a classic right here at home. These Apple Pie Snack Bars are just that. Loaded with all of our favorite flavors of apple pie but in an easy, bite sized form that are great to pack up for on the go. Just what we all love here. Better yet, you can definitely freeze these individually too for the days you are craving a little sweet snack.
What I love about these apple bars is that they are made with oats, fresh apples, Greek Yogurt, honey, and some pantry staples. So you can feel good about having one (or two) and can feel good about knowing what the kids are snacking on. Baking are own treats helps us cut out some of the boxed processed foods from the store, and this recipe was a hit with our children. So, we will be making these again very soon! How to make these easy Apple Pie Snack Bars
Step 1: Place the oats in a blender or food processor and pulse for about 10 seconds.
Step 2: Combine the ground oats with the coconut, the Greek yogurt, honey, cinnamon, nutmeg and the chopped apples in a large mixing bowl until thoroughly mixed.
Ste 3: Pour the mixture in a parchment paper lined baking dish and spread evenly, pressing mixture down to flatten.
Step 4: Bake for about 30 minutes, or until golden brown and the center is firm. Let cool completely before cutting and removing from baking dish. Enjoy!

Yes! Make them according to the directions. Then once cooled, cut and wrap them individually. Place in air tight container in the freezer or in a Zip-lock Bag.

- 1/2 cup unsweetened coconut flakes
- 1/2 cup vanilla Greek yogurt
- 1/4 cup honey
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup peeled finely diced Chelan Fresh apple, about the size of mini chocolate chips
- Preheat oven to 350°F. Line 8×8-inch baking dish with parchment paper and set aside.
