When the original Little Mermaid debuted in the last 80s, I was a fan from day one. I’ve been singing the tunes ever since. Ask my kids, they know “Part of Your World” is one of my go to family karaoke songs.
Disney is bringing back all the nostalgia this spring with the live action Little Mermaid. The count down is on and I’m already planning how to celebrate. With a Little Mermaid charcuterie board of course!

How I made Ariel on my Under the Sea Snack Board
Strawberries were the perfect choice for Ariel’s long red hair. I thought whole wheat crackers made sense for the body and used black olives and candy eyeballs again for the eyes and a slice of a strawberry for her mouth. Blueberries made up her top and celery and spinach for her mermaid tail.
Who is the villain in Disney’s The Little Mermaid?
Disney’s The Little Mermaid is a beloved classic but who is the villain of this story? Well, it depends on who you ask. To some, Ursula –the sea witch– might be seen as the obvious choice with her diabolical plot to steal Ariel’s voice in order to take control of the kingdom. However, others may argue that it was King Triton himself – Ariel’s overbearing dad and ruler of Atlantica– who caused most of the drama by banning all music from his kingdom. Ultimately, he was the one responsible for pushing Ariel away and into Ursula’s clutches in the first place! So if you want to pin down a “villain” for this movie, it looks like you have two choices: an evil sea witch or an overly protective father. Who will you choose? As a parent, I am on King Triton’s side and would definitely pick Ursula!
How I made Ursula on this Little Mermaid Charcuterie Board
I used dates and blackberries for Ursula’s tentacles, blueberries for the body. For her hair I cut white cheddar cheese in the shape of her pointy wavy hair. Red bell peppers were perfect for lips and black olives for eyes and eye lashes. I always have candy eyeballs on hand so these were perfect for a final touch.
Why is Disney releasing another Little Mermaid?
As with many other classics including Beauty and the Beast and Pinnochio, Disney commissioned the film to be re-released as a live action movie. Originally, the film was scheduled for a release date of 2021, but due to the pandemic, the release got postponed.

This healthy snack board only took about 20 minutes to put together and it’s sure to be a hit for your Little Mermaid watch party and Under The Sea festivities.
Once I created the characters, I used celery stalks and cauliflower to replicate coral and seagrass. I could not pass up using Swedish fish for a little extra flair.

Ingredients
Ursula
- 1 cup blackberries
- 1 cup dates
- 1 cup blueberries
- 2 slices cheddar cheese
- 2 slices red bell pepper
- 4 black olives
- 2 candy eyes

- This is the easiest character on the board to make! A red bell pepper makes for the perfect crab head and legs. I only had to add the candy eyeballs.

- I made Flounder using pineapple slices for the body, blueberries for his stripes and fins, a strawberry sliver for his smile and a candy eyeball for his eye.
