Make-Ahead Breakfast Taquitos
Ingredients
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers any color
- 6 small whole wheat tortillas
- Olive oil spray
- Salt and pepper to taste

Instructions
- Scramble the eggs in a nonstick skillet. Add salt and pepper to taste.
- Stir in the diced peppers just before the eggs finish cooking.
- Remove from heat and stir in the shredded cheese until melted.
- Warm tortillas for 10–15 seconds in the microwave to make them easier to roll.
- Spoon the egg mixture into each tortilla and roll them up tightly.
- Spray each taquito lightly with olive oil.
- Cook in an air fryer at 375°F for 6–8 minutes, until golden and crispy.
- No air fryer? Bake at 400°F for 10–12 minutes instead.
