These easy Make-Ahead Breakfast Taquitos are a healthy breakfast for kids, packed with eggs, cheese, and bell peppers, all wrapped in whole wheat tortillas. Air fry or bake until crispy and serve with ¡Yo Quiero! Grab & Go dips for a fun, balanced meal that’s perfect for busy mornings.

Ingredients
  

  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers any color
  • 6 small whole wheat tortillas
  • Olive oil spray
  • Salt and pepper to taste

Instructions
 

  • Scramble the eggs in a nonstick skillet. Add salt and pepper to taste.
  • Stir in the diced peppers just before the eggs finish cooking.
  • Remove from heat and stir in the shredded cheese until melted.
  • Warm tortillas for 10–15 seconds in the microwave to make them easier to roll.
  • Spoon the egg mixture into each tortilla and roll them up tightly.
  • Spray each taquito lightly with olive oil.
  • Cook in an air fryer at 375°F for 6–8 minutes, until golden and crispy.
  • No air fryer? Bake at 400°F for 10–12 minutes instead.
