Greek Watermelon Cucumber Salad Cups with SUNSET® Pop Its™

Back-to-school lunchboxes start strong. Cute containers, fresh ideas, maybe even a handwritten note if we are really feeling ourselves.
Then week two hits, and suddenly we are packing the same three things on repeat while hoping the lunchbox comes home looking less rejected.
That is where these Greek Watermelon Cucumber Salad Cups with SUNSET® POP ITS™ come in.
They are fresh, colorful, crunchy, and easy to pack as a lunchbox side, snack cup, or after-school bite. Made with SUNSET® POP ITS™ cucumbers, tomatoes, watermelon, feta, mint, and a simple lemon vinaigrette, this recipe brings big Greek salad energy in a more kid-friendly, school-week format.
Instead of serving it as one large salad bowl, we are turning it into individual cups that feel easy to prep, easy to pack, and easy for kids to enjoy.
Why These Cucumber Salad Cups Work for Back to School
School lunches need to be realistic. They need to be easy to pack, hold up well, and ideally not come home completely untouched like they were personally offended by your effort.

These cucumber salad cups work because they are:
- Fresh and colorful
- Easy to prep ahead
- Simple to portion into lunchbox cups or bento containers
- Made with bite-sized SUNSET® POP ITS™ cucumbers
- Great as a lunchbox side, snack cup, or mom lunch
- Easy to pair with protein for a more complete meal
- A fun way to add more produce to the school week
SUNSET® POP ITS™ cucumbers are the hero here because they are small, crunchy, and easy to enjoy. Their bite-sized shape makes them a natural fit for lunchboxes, snack boxes, and on-the-go school routines.
A Fresh Lunchbox Side That Does Not Feel Boring
Lunchbox sides can get repetitive fast. Fruit, crackers, carrots, repeat until winter break.
These cucumber salad cups give families another easy option. The mix of crisp cucumbers, juicy watermelon, tomatoes, feta, and mint feels fresh and flavorful, but still simple enough for a busy school week.
The key is packing the dressing separately. That helps keep the SUNSET® POP ITS™ cucumbers crisp and lets kids decide how much dressing they want to add. Tiny choice, big lunchbox buy-in.
Pop Its™ Cucumbers Plus Dip: An Easy Lunchbox Win
One of the easiest ways to use mini cucumbers during the school week is to pack them whole with a dip your kids already like.
Registered Dietitian Sarah Hester says, “Dips are a great tool to introduce new vegetables.”
That is exactly why Pop It’s™ work so well for school lunches and snacks. Their bite-sized crunch makes them easy to pack whole with hummus, ranch yogurt dip, tzatziki, guacamole, or another favorite dip.
You can pack some Pop Its™ whole for dipping, then use the rest of the package to make these Greek Watermelon Cucumber Salad Cups. Same product, two easy school-week uses. That is the kind of lunchbox math we actually like.
How to Pack Greek Watermelon Cucumber Salad Cups
These salad cups can be packed in small snack containers, bento compartments, or lunchbox cups. They work well as a side with sandwiches, wraps, pita, grilled chicken, or hummus.

To keep everything fresh:
- Pack the salad ingredients together in a small container.
- Keep the lemon vinaigrette in a separate small dressing cup.
- Add the dressing right before eating, if possible.
- Pair with a protein or whole grain for a more filling lunch.
- Use an insulated lunchbox and ice pack to keep everything chilled.
This is the kind of lunchbox addition that feels a little more exciting without asking parents to suddenly become lunchbox artists. We are not carving cucumbers into swans. We are surviving school mornings.
Build a More Balanced Lunchbox
These cucumber salad cups are a fresh produce side, so pair them with something filling to make lunch feel more complete.
Easy pairings include:
- Turkey sandwich
- Grilled chicken
- Hummus and pita
- Hard-boiled eggs
- Cheese stick
- Greek yogurt
- Pasta salad
- Turkey roll-ups
- Whole grain crackers
- Chicken wrap
You can also pack whole SUNSET® POP ITS™ cucumbers with a dip, like hummus, ranch yogurt dip, tzatziki, or guacamole, for a simple crunchy snack.
Use the Whole Package of SUNSET® Pop Its™
This recipe uses a full 8 oz package of SUNSET® Pop Its™ cucumbers in the salad cups, which makes it an easy way to use the whole product without leftovers sitting around.
Families can also use POP ITS™ throughout the school week in different ways.
Breakfast
Serve POP ITS™ cucumbers with egg bites, breakfast wraps, or a savory yogurt bowl.
Lunch
Pack whole POP ITS™ cucumbers in a lunchbox with hummus, tzatziki, ranch yogurt dip, guacamole, or cheese cubes.
Snack
Add POP ITS™ cucumbers to snack boxes with crackers, fruit, pretzels, cheese, turkey roll-ups, or dip.
Dinner
Serve mini cucumbers with burgers, wraps, grilled chicken, pasta, taco bowls, or a family-style snack board.
The school-week win is that one package can work in more than one way. Pack some whole for dipping, then use the rest to prep these Greek Watermelon Cucumber Salad Cups.
No-Waste Tip
If you are packing the salad cups ahead of time, keep the dressing separate until ready to serve. This helps keep the cucumbers crisp and makes the salad last longer in the fridge.
You can also prep the cucumbers and watermelon ahead, then assemble the cups the night before or the morning of school.
Make These Salad Cups Your Own
This recipe is easy to adjust based on what your family likes and what you have on hand.

Try adding:
- Grilled chicken
- Chickpeas
- Cooked pasta
- Hummus on the side
- Pita wedges
- Extra tomatoes
- Bell peppers
- Olives, for kids who like them
- Turkey roll-ups
- A cheese stick on the side
For younger kids, keep the ingredients separated in a bento box. For older kids or parents, toss everything together with the dressing right before eating.
