This Sweetpotato Chicken Flatbread Pizza is a quick, dietitian-approved dinner perfect for busy school nights — and it’s bursting with flavor and nutrients.

@chefjulie_rd shares why @ncsweetpotatoes deserve a year-round spot on your plate: they’re naturally sweet, rich in fiber, vitamin A & C, and packed with complex carbs to keep your family energized and satisfied. 🍠💪

Ready in no time, this flatbread pizza adds a wholesome twist to pizza night and proves that nutritious can also be delicious!

2 cups NC sweetpotatoes cooked & mashed
9 oz. chicken breast, cooked, shredded
1 clove garlic
1/4 cup walnuts
1/2 cup flat-leaf parsley
1 tablespoon butter softened
1/4 teaspoon unsalted salt
1/4 teaspoon pepper
1/2 teaspoon dry ranch dressing mix
4 8- inch round flat bread
1/4 cup of shredded cheddar cheese

Preheat over to 350º F. In a food processor, add garlic, walnuts, parsley and blend well. In a medium bowl, add mashed sweetpotatoes; stir in parsley mixture, butter, salt, pepper, dry ranch dressing mix and mix well.

Spread sweetpotato mixture onto flat bread. Top each flat bread round with chicken pieces and sprinkle cheese over the top. Place each mini pizza on a a large baking sheet (without edges touching). Bake until heated through and cheese is melted (approximately 10 minutes). Serve hot.

Quick, satisfying, and totally family-friendly! 🧅🍔🧀

These BBQ cheeseburger quesadillas with caramelized @realsweetonions Vidalia® onions are a weeknight hero — perfect for busy families.

Registered dietitian approved, our RD @chefjulie_rd loves these easy folded quesadilla recipe for busy families on the go. Fast to make, easy to reheat, and packed with melty cheese and sweet onion flavor that kids love. Fit for reheating after practice or tucking inside lunchboxes, they’re comfort food with a smart twist.

8 large flour tortillas
1 lb cooked ground beef seasoned to your liking
1 cup caramelized Vidalia® onions
1 cup shredded cheddar cheese
½ cup BBQ sauce

Lay one tortilla flat. Cut a single slice from the center to the edge.

Add the cooked beef to the bottom left quarter, cheese to the bottom right, caramelized onions to the top right, and BBQ sauce to the top left. Fold the top left (BBQ sauce) over the onions. Then fold that over the cheese, and finally fold it all down over the beef. Repeat with all tortillas.

Warm a skillet over medium heat with cooking spray. Cook each quesadilla for about 3 minutes per side until golden and crisp, and the cheese has melted.
