Wonton Taco Cups

These mini Wonton Taco Cups are a great appetizer, easy weeknight meal, or lunchbox idea. These are ready in 30 minutes, and the whole family will love them.

Ingredients
  

  • 3/4 lb lean ground beef
  • 1/2 cup ¡Yo Quiero!™ Salsa
  • 1/2 small RealSweet® Vidalia onion diced
  • 1/2 can black beans about 8 oz, drained and rinsed
  • 36 wonton wrappers
  • ¡Yo Quiero!™ Chunky Guacamole for topping
  • ¡Yo Quiero!™ White Queso for topping
  • 1 tablespoon fresh cilantro chopped (optional, for garnish)

Instructions
 

  • Preheat oven to 350°F. Spray muffin pan with nonstick cooking spray and set aside.
  • Heat large nonstick skillet over medium heat. Drizzle with olive oil, add diced RealSweet® Vidalia onion, and cook until translucent.
  • Add ground beef and cook 5-7 minutes, or until fully cooked through. Drain if needed and return to pan. Stir in black beans and ¡Yo Quiero!™ Salsa until well combined.
  • Line muffin pan cups with wonton wrappers, placing 2 wrappers in each cup. Spoon taco mixture evenly into each cup.
  • Bake 12-15 minutes, or until wonton edges are golden brown and crispy.
  • Top with ¡Yo Quiero!™ Chunky Guacamole and ¡Yo Quiero!™ White Queso.
  • Garnish with chopped cilantro, if desired.
