Tomato Turkey Burger Bowls

These Turkey Burger Bowls are a fresh, family-friendly twist on burger night. Each bowl is layered with seasoned ground turkey, crispy roasted potatoes, lettuce, pickles and juicy Nature Fresh Farms Devours™ Tomatoes, then finished with a creamy burger sauce. They are easy to customize, packed with familiar flavors and perfect for a quick back-to-school dinner.

Ingredients
  

For the Bowls

  • 1 pound lean ground turkey
  • 1 tablespoon olive oil divided
  • 1 teaspoon garlic powder divided
  • 1 teaspoon onion powder divided
  • ½ teaspoon paprika
  • ½ teaspoon salt divided
  • ¼ teaspoon black pepper
  • 4 medium potatoes cut into wedges
  • 6 cups chopped romaine or lettuce of choice
  • 2 cups chopped Nature Fresh Farms Devours™ Tomatoes
  • ½ cup sliced pickles
  • ½ cup shredded cheddar cheese

For the Greek Yogurt Burger Sauce

  • ½ cup plain Greek yogurt
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon finely chopped pickles or relish
  • 1 teaspoon pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
  • Add potato wedges to the baking sheet. Drizzle with 2 teaspoons olive oil and season with paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon salt, and black pepper. Toss to coat.
  • Bake for 25 to 30 minutes, flipping halfway through, until potatoes are golden and tender. To air fry, cook at 400°F for 15 to 18 minutes, shaking halfway through.
  • While potatoes cook, heat remaining olive oil in a skillet over medium heat.
  • Add ground turkey, remaining garlic powder, remaining onion powder, and remaining salt. Cook for 7 to 9 minutes, breaking it apart with a spoon, until fully cooked. Turkey can also be formed into small burger-style patties, if preferred.
  • In a small bowl, whisk together Greek yogurt, ketchup, mustard, chopped pickles or relish, pickle juice, garlic powder, and onion powder until smooth.
  • Divide lettuce among bowls. Top with cooked turkey, roasted potato wedges, chopped Devours™ Tomatoes, pickles, and shredded cheddar cheese.
  • Drizzle with Greek yogurt burger sauce or serve the sauce on the side for dipping.
  • Serve with whole grain buns on the side, if desired.

Notes

For younger kids, serve the ingredients deconstructed so they can build their own plate.
For meal prep, cook the turkey and potatoes ahead of time and store separately from the lettuce, tomatoes, and sauce.
For lunchboxes, pack the sauce on the side to keep the ingredients fresh.
For sandwich skewers, layer whole grain bread cubes, turkey, cheese, lettuce, and Devours™ Tomatoes on small skewers or food picks.
Whole grain buns can be served on the side for a more traditional burger-night option.
