Preheat oven to 425°F. Line a baking sheet with parchment paper.
Add potato wedges to the baking sheet. Drizzle with 2 teaspoons olive oil and season with paprika, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon salt, and black pepper. Toss to coat.
Bake for 25 to 30 minutes, flipping halfway through, until potatoes are golden and tender. To air fry, cook at 400°F for 15 to 18 minutes, shaking halfway through.
While potatoes cook, heat remaining olive oil in a skillet over medium heat.
Add ground turkey, remaining garlic powder, remaining onion powder, and remaining salt. Cook for 7 to 9 minutes, breaking it apart with a spoon, until fully cooked. Turkey can also be formed into small burger-style patties, if preferred.
In a small bowl, whisk together Greek yogurt, ketchup, mustard, chopped pickles or relish, pickle juice, garlic powder, and onion powder until smooth.
Divide lettuce among bowls. Top with cooked turkey, roasted potato wedges, chopped Devours™ Tomatoes, pickles, and shredded cheddar cheese.
Drizzle with Greek yogurt burger sauce or serve the sauce on the side for dipping.
Serve with whole grain buns on the side, if desired.
