Sunshine Peach Muffins
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 ripe peaches chopped
- 2 teaspoons honey
- 1 large egg
- 1/2 cup 1% milk
- 1/4 cup vegetable oil
Cheddar Cherry Tomato Omelet
- 1 teaspoon unsalted butter
- 1 large egg scrambled in bowl
- 2 tablespoons shredded lowfat Cheddar cheese
- 1/4 cup halved cherry tomatoes

Line muffin pan with paper liners; set aside.
Combine flours, baking powder, baking soda, cinnamon, nutmeg and salt in large bowl; set aside.
Mash peaches and honey in separate bowl. Stir in egg, milk and oil.
Fold wet ingredients into dry ingredients until just combined. Do not overmix.
Spoon batter into prepared muffin cups, filling each about ¾ full. Bake 18-20 minutes, or until golden. Cool on wire rack 5 minutes.
