Protein Pumpkin Parfaits

These protein pumpkin parfaits layer creamy yogurt, sweet pumpkin puree and crunchy granola for a light Thanksgiving treat that works as breakfast, dessert or a quick snack. They come together in minutes and feel festive without being heavy.

Ingredients
  

  • 32 ounce container vanilla protein yogurt
  • 1 cup unsweetened pumpkin puree
  • 1 to 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • Granola of your choice
  • Whipped cream

Instructions
 

  • In a small bowl, mix the pumpkin puree with maple syrup and pumpkin pie spice.
  • In each glass or jar, add a layer of yogurt.
  • Spoon a layer of the pumpkin mixture on top.
  • Add granola and repeat layers until all four parfaits are assembled.
  • Top with whipped cream and a sprinkle of cinnamon before serving.
