Patriotic Roasted Veggie Skewers Recipe

These Patriotic Roasted Veggie Skewers are an easy family-friendly summer dinner made with Grimmway Produce Baby Petite Carrots, Baby American Blend Potatoes, lean chicken and simple seasonings. They’re colorful, hearty and perfect for cookouts, backyard dinners or patriotic summer celebrations.

  • For the Skewers
  • 1 bag Grimmway Produce Baby Petite Carrots
  • 1 bag Grimmway Produce Baby American Blend Potatoes
  • 1 pound chicken breast cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Optional Greek Yogurt Herb Sauce

  • 1 cup plain Greek yogurt
  • Lemon juice to taste
  • Fresh parsley chopped
  • Garlic powder to taste
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat or preheat oven to 425°F.
  • Cut any larger potatoes in half so all pieces are similar in size.
  • Par-cook potatoes and carrots by microwaving or boiling for a few minutes, just until slightly tender but not fully cooked.
  • In a large bowl, toss carrots, potatoes and chicken with olive oil, garlic powder, Italian seasoning, salt and pepper.
  • Thread chicken, carrots and potatoes onto skewers, alternating ingredients.
  • Grill for 12 to 15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender. To roast, place skewers on a lined baking sheet and bake for 20 to 25 minutes, turning once halfway through.
  • In a small bowl, mix Greek yogurt, lemon juice, parsley, garlic powder, salt and pepper to make the optional sauce.
  • Garnish skewers with fresh parsley and serve with yogurt sauce, if desired.

Notes

Storage Tip
Store leftover skewers in an airtight container in the refrigerator. Remove ingredients from the skewers before reheating for easier storage and serving.
