1cupshredded Mexican-style cheese blendcheddar cheese or Monterey Jack cheese
½cupcooked chickenbeans, or sautéed veggies, optional

½cupsliced cucumbers
½cupbaby carrots
½cupbell pepper strips
½cupcherry tomatoes
Fruit or another favorite lunchbox side

Instructions
Heat a skillet over medium heat.
Place one tortilla in the skillet and sprinkle with shredded cheese.
Add cooked chicken, beans, or sautéed veggies, if using.
Top with a second tortilla and cook for 2 to 3 minutes, or until the bottom is golden and the cheese begins to melt.
Carefully flip and cook the other side for another 2 to 3 minutes, until golden and warmed through.
Remove from the skillet and let cool slightly.
Use cookie cutters to cut the quesadilla into fun shapes, such as stars, hearts, circles, or gingerbread people.
