- 1 lb Italian chicken sausage links (or plant-based sausage alternatives) 4 links
- 2 medium Autumn Glory apples cut into 1-inch wedges
- 2 fennel bulbs, fronds reserved cut into wedges
- 1 tbsp olive oil extra virgin
- 6 tbsp apple cider vinegar
- salt and pepper (add to taste)

Preheat oven to 400°F (200°C).
In a large bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
Add the chicken sausage, apple wedges, and fennel wedges to the bowl, tossing to coat evenly.
Arrange everything on a sheet pan, spreading out the sausage, apples, and fennel in a single layer.
Drizzle any remaining dressing over the top.
Bake in the preheated oven for 40–50 minutes, until the sausages are cooked through and the apples and fennel are tender and caramelized.
Garnish with reserved fennel fronds before serving.
