  • 3 Rockit™ Apples small snack-sized
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons almond butter or your favorite nut/seed butter
  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions
 

  • Slice Your Apples: Cut the apples into ¼-inch thick rounds and core them. Each apple gives about 3-4 slices. If you have an Apple Corer, this step is a breeze.
  • Mix the Topping: Combine the shredded coconut, and almond butter in a small bowl. This mixture is the magic that gives these Samoas their signature flavor—feeling fancy? Add a pinch of cinnamon for a warm, cozy twist.
  • Assemble the samoas, spread some coconut mixture onto each apple slice, and arrange them on parchment paper.
  • Melt the chocolate chips and coconut oil together (a quick zap in the microwave works great).
  • Drizzle the melted chocolate over the apple slices.
  • Chill and Serve: To firm up the slices, put them in the freezer for 5-10 minutes. Then, they’re ready to enjoy.
