2 CMI American Dream® apples cored and sliced into rings 2 eggs ¾ cup Greek yogurt 1 tablespoon maple syrup or brown sugar ½ cup all-purpose flour or gluten-free flour blend 1½ teaspoons baking powder 2 teaspoons cinnamon Nonstick cooking spray or a small amount of butter for cooking

Core apples and slice into rings, about ¼-inch thick.
In a mixing bowl, whisk together eggs, Greek yogurt and maple syrup.
Add flour, baking powder and cinnamon. Stir until just combined.
Heat a nonstick skillet over medium heat and lightly coat with nonstick cooking spray or butter.
Dip each apple ring into the pancake batter, coating both sides.
Place coated apple rings in the skillet and cook for 2 to 3 minutes per side, or until golden brown and cooked through.
Serve warm with vanilla Greek yogurt and a light drizzle of maple syrup, if desired.
