Apple Pie Pancake Rings

These Apple Pie Pancake Rings are a fun kid-friendly breakfast made with CMI American Dream® apples dipped in cinnamon Greek yogurt pancake batter and cooked until golden. They taste like a mix between apple pie and pancakes and are perfect for summer mornings, weekend breakfasts or post-camp snacks.

Ingredients
  

  • 2 CMI American Dream® apples cored and sliced into rings
  • 2 eggs
  • ¾ cup Greek yogurt
  • 1 tablespoon maple syrup or brown sugar
  • ½ cup all-purpose flour or gluten-free flour blend
  • teaspoons baking powder
  • 2 teaspoons cinnamon
  • Nonstick cooking spray or a small amount of butter for cooking

Instructions
 

  • Core apples and slice into rings, about ¼-inch thick.
  • In a mixing bowl, whisk together eggs, Greek yogurt and maple syrup.
  • Add flour, baking powder and cinnamon. Stir until just combined.
  • Heat a nonstick skillet over medium heat and lightly coat with nonstick cooking spray or butter.
  • Dip each apple ring into the pancake batter, coating both sides.
  • Place coated apple rings in the skillet and cook for 2 to 3 minutes per side, or until golden brown and cooked through.
  • Serve warm with vanilla Greek yogurt and a light drizzle of maple syrup, if desired.
  • Finish with a dusting of cinnamon for an apple pie-inspired touch.
