- 1 large egg
- 1 large egg white
- 1 teaspoon olive oil
- 1/4 cup chopped sweet onion
- 1/2 cup chopped broccoli
- 2 tablespoons shredded lowfat Cheddar cheese
- 1 teaspoon parsley
- 1/4 cup diced tomatoes
Whisk egg and egg white together in small bowl.
Heat oil in small nonstick skillet over medium heat; add onions and broccoli, and cook 3-4 minutes. Add eggs and cook 3-4 minutes, or until set. Add cheese and parsley. Stir, fold in half and remove from heat.
Top with tomatoes.
