  • Stove
  • Large skillet or dutch oven


  • lb chicken breast
  • ¾ sweet onion thinly sliced
  • 5 mini sweet peppers sliced
  • 2 cloves garlic minced
  • 2 tbsp True Made Foods Veggie Ketchup
  • 1 tbsp curry powder
  • 13 ½ oz lite coconut milk 1 can
  • Red pepper flakes if desired
  • 2 cups cooked rice


  • Heat a small amount of oil or spray with olive oil spray in a dutch oven or large skillet.
  • Add chicken. Brown chicken, remove, cut into thin strips.
  • In the same pan saute onion, garlic and peppers under slightly tender. Approx 5 min.
  • Add 1 tbsp curry powder. Stir well.
  • Add 2 tbsp ketchup. Stir well.
  • Add lite coconut milk. Stir well.
  • Add dash of red pepper flakes if desired.
  • Add chicken back in, stir well, cover and cook until chicken is cook through.
  • If sauce needs to thicken, leave the lid off for a few minutes.
  • Serve over rice.
