How To Make Shakshouka Using Fresh Tomatoes

Made with fresh tomatoes and a few spices, you will love all the flavor of this easy-to-prep healthy breakfast recipe.

- 2 cups whole Nature Fresh Farms Ombre Cherry Tomatoes - I used a variety
- 1/2 Sweet Onion diced
- 4 eggs
- 1 cup water
- Olive Oil spray or 1 tsp cooking oil coconut, corn etc
- 2 tsp apple cider vinegar
- 1 tsp brown sugar
- 1 tsp cumin powder
- ¼ tsp salt
Heat the oil in a cast-iron skillet, add the onion and cook until translucent.
Add the water, vinegar, sugar, cumin powder and salt, mix to combine.
Add the Nature Fresh Farms Ombre Cherry Tomatoes.
Bring to boil and let simmer over low heat until thickened, approx 30-40 mins.
Crack the eggs on top of the tomato sauce and cover the skillet with a lid.
Cook over low heat until the egg whites are set and the yolks are a bit cooked, but still runny.
Remove the lid, and enjoy!
