How To Make Shakshouka Using Fresh Tomatoes

Made with fresh tomatoes and a few spices, you will love all the flavor of this easy-to-prep healthy breakfast recipe.

Ingredients
  

  • 2 cups whole Nature Fresh Farms Ombre Cherry Tomatoes - I used a variety
  • 1/2 Sweet Onion diced
  • 4 eggs
  • 1 cup water
  • Olive Oil spray or 1 tsp cooking oil coconut, corn etc
  • 2 tsp apple cider vinegar
  • 1 tsp brown sugar
  • 1 tsp cumin powder
  • ¼ tsp salt

Instructions
 

  • Heat the oil in a cast-iron skillet, add the onion and cook until translucent.
  • Add the water, vinegar, sugar, cumin powder and salt, mix to combine.
  • Add the Nature Fresh Farms Ombre Cherry Tomatoes.
  • Bring to boil and let simmer over low heat until thickened, approx 30-40 mins.
  • Crack the eggs on top of the tomato sauce and cover the skillet with a lid.
  • Cook over low heat until the egg whites are set and the yolks are a bit cooked, but still runny.
  • Remove the lid, and enjoy!
