So much more much than traditional baked potatoes! Prepped in just a few minutes and ready i under 30 minutes, these Mexican potatoes will be a hit with the whole family!

olive oil

guacamole

salsa
1/4

shredded lowfat mozzarella cheese
Instructions
Preheat oven to 400°F.
Season potatoes with olive oil, salt and pepper. Lay on parchment-lined baking sheet and bake 15-20 minutes, or until tender.
Scoop out ¼ of inside of each potato half. Add guacamole, salsa and cheese.
Return to oven and bake 2 minutes, or until cheese melts.
Notes
Use small or mini potatoes to keep the baking time lower. Of course, you can definitely use larger potatoes, but your baking time will be increased.
