Ingredients
  

  • 1 large egg
  • 1 large egg white
  • 1 teaspoon olive oil
  • 1/4 cup chopped sweet onion
  • 1/2 cup chopped broccoli
  • 2 tablespoons shredded lowfat Cheddar cheese
  • 1 teaspoon parsley
  • 1/4 cup diced tomatoes

Instructions
 

  • Whisk egg and egg white together in small bowl.
  • Heat oil in small nonstick skillet over medium heat; add onions and broccoli, and cook 3-4 minutes. Add eggs and cook 3-4 minutes, or until set. Add cheese and parsley. Stir, fold in half and remove from heat.
  • Top with tomatoes.
