Try this Meal Prep Breakfast Scramble for an easy to make meal that is exploding with flavors. The entire family can enjoy it, too!

- 5 eggs
- 1 tsp olive oil
- ½ lb small yellow potatoes diced
- ½ large sweet onion diced
- 10 cherry tomatoes halved
- 1 clove garlic minced
- ⅓ cup Shredded Cheddar Cheese
- 1/2 tsp salt
- 1/8 tsp pepper
- ½ avocado diced
- Handful cilantro optional
Heat skillet over medium heat. Spray with nonstick cooking spray. Whisk eggs and add to pan.
Cook 3 to 5 minutes stirring occasionally, until eggs are set. Remove from pan and set aside.
Return skillet to heat. Add oil, potatoes and onions and cook 10-12 minutes, stirring occasionally, until potatoes are cooked.
Add tomatoes and garlic and cook additional 1-2 minutes.
Stir in eggs, cheese, salt and pepper to combine.
Top with avocado and cilantro.
