Taco Stuffed Peppers

My idea for taco stuffed peppers stemmed from the deep love for tacos in our house, and of course tacos are a meal that EVERYONE eats.

Equipment

Ingredients
  

  • 6 bell peppers
  • 1 lb lean ground beef I used 93/7
  • 1 RealSweet Onion
  • 1 packet taco seasoning
  • 8 oz tomato sauce
  • 15 oz black beans 1 can - drained and rinsed
  • 4 oz green chiles
  • ½ cup shredded Mexican blend cheese

Instructions
 

  • Preheat oven to 400 degrees.
  • In a medium skillet over medium heat add the diced onions and saute for approximately 2- 3 minutes.
  • Add the meat and cook thoroughly.
  • Meanwhile, slice peppers in half, removing the stems and the seeds.
  • Place them (hollow side up), on a greased baking sheet.
  • Add the Taco Seasoning, tomato sauce, drained black beans and diced green chiles to the meat and cook for 2-3 minutes or until mixture thickens.
  • Scoop the taco meat inside each of the bell pepper halves.
  • Bake at 400 for 10-15 minutes.
  • Remove from oven, top each with cheese.
  • Place back in the oven for 2- 3 minutes until cheese is melted.

If you are using 85/15 ground beef the nutrition facts would be: 335 kcal, 14.8g fat, 60.2 mg cholesterol, 500 mg sodium, 27.4g CHO, 10.5g sugar, 22.8g protein
