Berry and Sweetpotato Popsicles

Made with simple ingredients and prepped in under 10 minutes, these berrylicious sweetpotato popsicles are sure to be a summer favorite. Bonus...they are healthy too!

- 13½ oz light coconut milk 1 can
- ½ cup 1% milk
- ½ cup raspberries
- ½ cup strawberries diced
- 1 cup mashed sweetpotato I cooked mine in the microwave for 5 minutes. Be careful, it will be hot!
- 3 tbsp maple syrup you can use agave or honey as a substitute
- 1 tsp vanilla extract
Place all the ingredients into your food processor and blend until smooth.
Pour into your favorite popsicle molds. My molds are only 3.5 oz, so depending on the size of yours will depend on how many popsicles you will make. If you end up with extra mixture, just freeze it in a freezer-safe container and enjoy it as a sweet treat with a spoon :)
Freeze for 3-4 hours or overnight
