Healthy Sweetpotato Muffins

- 1 cup mashed sweetpotato
- 2 cups all purpose flour
- ⅓ cup vegetable oil
- ⅓ cup honey
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp salt
- ½ cup Mini chocolate chips
Preheat oven to 350°
Add mashed sweet potatoes, oil, honey, eggs, and vanilla extract to a bowl and mix
Use a separate bowl to mix flour, baking powder, baking soda, cinnamon and salt
Add dry ingredients to the wet ingredients bowl and fold the mix until its fully combined. Fold in chocolate chips
Spray a muffin tin with cooking spray. Scoop batter in the tin.
Bake for 20 to 25 minutes or until muffins are golden.
