Chopped Chinese Chicken Salad

Lunch or dinner is quick and easy with this simple recipe for a Chinese Chicken Salad. A bagged salad kit gets a hearty spin with the addition of chicken, mandarins and edamame. To save time in the kitchen, we made this salad with sliced deli chicken, but any leftover chicken would work well in this dish.

- 2 mandarins peeled, segmented
- 1/2 pound low-sodium deli-sliced chicken
- 1/2 cup shelled edamame
Mix all contents of salad kit, including dressing, in large bowl. Add mandarins, chicken and edamame. Mix well.
