Apple Pie Snack Bars

These nut-free bars taste just like apple pie and are safe to pack in lunchboxes or pass out to your little league team after a game.

Ingredients
  

  • 2 1/2 cups quick oats
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup vanilla Greek yogurt
  • 1/4 cup honey
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup peeled finely diced Chelan Fresh apple, about the size of mini chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line 8x8-inch baking dish with parchment paper and set aside.
  • Place oats in blender or food processor and pulse for 10 seconds.
  • Combine oats, coconut, yogurt, honey, cinnamon, nutmeg and apples in large bowl until thoroughly mixed. Add to prepared baking dish and spread evenly, pressing mixture down to flatten.
  • Bake 30 minutes, or until golden brown and center is firm. Let cool completely before cutting and removing from baking dish.
