As moms, we are always looking for healthy snacks that are also good on-the-go. Families are busy! We are going from school, to sports and back again. Plus, doesn’t it seem like the kids are almost always hungry? Or wait, is that me that’s always hungry?! Both actually 🙂 Healthy snack options are really important to me, and knowing what I am giving the kids for a snack is also important.

Actually knowing what the ingredients are in our snacks is also important, healthy ingredients. Healthy snacks that taste good and are kid-approved are possible! Really?  Yes! These no bake granola bites are proof, I promise!

To make these no bake granola bites, you only need 8 simple ingredients:

Now, when you are preparing to make these no bake energy bites, you need about 5 minutes, then 30 minutes in the refrigerator. Easy! Which is exactly what us moms need…easy and healthy.

Can you use other dried fruit when making granola bites?

You definitely can, I had blueberries and cranberries on hand, so that’s what I used. Feel free to experiment. Freeze-dried fruit would also be another excellent option.

Can you substitute the nuts when making these healthy energy bites?

Yes! If all you have is almonds at home, then feel free to use almonds. It may change the texture some, and the flavor will change some, but you will still have a delicious and nutritious snack to feed your family. How do you store granola bites?

Well, if they aren’t gobbled up right away, store them in an airtight container. They will last for about a week in the refrigerator.

Ingredients
  

  • 1 1/2 cup old fashioned rolled oats
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/2 cup dried blueberries
  • 1/4 cup chocolate chips
  • 1/4 cup almond or peanut butter
  • 1/4 cup honey

Instructions
 

  • Mix oats, almonds, pecans, cranberries, blueberries and chocolate chips in large mixing bowl. Set aside.
  • Heat almond butter and honey in small saucepot over low heat 2-5 minutes, stirring occasionally, or until smooth. Pour over oat/fruit mix and stir until just incorporated.
  • Moisten hands and roll into 20 1½-inch balls. Place on parchment-lined baking sheet and refrigerate 30 minutes, or until set.
