Minted Spring Mix, Dark Sweet Cherries & Cantaloupe Salad

  • 1/4 cup cranberry-cherry juice
  • 2 tablespoons white wine vinegar
  • 1/2 lemon, juiced
  • 2 tablespoons olive oil
  • 1/2 teaspoon minced fresh mint
  • 4 dark sweet cherries, pitted, halved
  • 1 (5 oz.) bag spring mix salad greens
  • 2 cups dark sweet cherries, pitted, halved 
  • 2 cups cubed cantaloupe
  • 1/4 cup chopped fresh mint


  1. Add cranberry-cherry juice, vinegar, lemon juice, olive oil, herbs de Provence and mint to medium bowl. Whisk until well combined.
  2. Add cherries to infuse with flavor.
  3. Evenly divide spring mix between four salad plates. Top with cherries, cantaloupe and mint. Drizzle with Cherry Mint Vinaigrette.
