Oatmeal is hearty, healthy and filling in this recipe that has a sweet twist with the yogurt kabobs.

Ingredients

Yogurt Kabobs

  • 1 Gala apple, chopped
  • 1 Bartlett pear, chopped
  • 1 banana, chopped
  • 1 orange, peeled, segmented
  • 1 cup cubed watermelon
  • 1/4 cup shredded coconut
  • 1 cup lowfat vanilla yogurt
  • 4 skewers

Fruity Vanilla Oatmeal

  • 2 cups 1% milk
  • 1 cup rolled oats
  • 1/2 banana, chopped
  • 1/2 cup blueberries
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 2 tablespoons light brown sugar

Instructions

Yogurt Kabobs

  1. Spread coconut and yogurt onto separate plates.
  2. Roll skewers in yogurt then coconut.

Fruity Vanilla Oatmeal

  1. Heat medium saucepot on medium heat; add milk, oats, banana, blueberries, vanilla, cinnamon, nutmeg, salt and brown sugar, and simmer, stirring occasionally, 10-13 minutes, or until the desired creaminess is achieved.
